Real Charcoal(Wood) Grilling

On this Memorial Day a lot of folks fire up the grill to cook out. Unfortunately, many will just walk out and turn on the gas and hit a button and poof, be ready to grill. How boring, why not just turn on the oven or stove top? I notice how many gas grill accessories include ”flavor enhancer bars” to give the illusion of an actual wood burning fire. I never understood this, why not actually use wood? Charcoal is compressed wood.
Henry Ford, the car guy, invented the charcoal briquette that is used today; and food ALWAYS tastes better cooked over charcoal. It is what I will use today when we slow cook, and smoke with Mesquite wood chips, a Boston Butt. Mmmm, happy grilling.
